Fabulous Black Bean Burgers
So, I tried a new recipe today. I had a lot of random things I needed to use up in my fridge, so I came up with this recipe to go along with my side of crispy brussels sprouts and roasted potatoes...and you guessed it, they turned out fabulously!
Makes: 6 Burgers
Takes: ~ 30-40 minutes

Note: For burgers pictured, I topped with roasted mushrooms, avocado, fresh spinach, and Vegenaise. For roasted mushrooms, just used sliced mushrooms, add to baking dish, salt and pepper, then put in the oven for 10 minutes.

Fabulous Black Bean Burgers
Makes: 6 Burgers

Here's what you need:
- 2 Cans of Organic Unseasoned Black Beans (drained and rinsed)
- 1 Poblano Pepper (diced)
- 1/2 Red Onion (diced)
- 2 Cloves Garlic (minced)
- 1/4 Cup Nutritional Yeast
- 1/4 Cup Psyllium Husk (used as a binder)
- 2 Flax Eggs
- 1 TBS Onion Powder
- 1 TBS Garlic Powder
- 1 TBS Cardamom (ground)
- Salt and Pepper to taste
- *1/2 Package of Daiya Mozzarella Shreds

To make:
- Preheat oven to 400° F.
- Mash black beans with a potato masher until mostly mashed.
- Add spices and vegetables and stir.
- Add remaining ingredients and stir (you will probably have to use your hands). If the mixture isn't sticking well, add a little more water. Be careful not to add too much, if it is runny, your burgers will end up a big plate of slop!
- Use your hands to form patties ( about fist sized).
- Place on greased baking sheet.
- Bake for 10 minutes.
- Turn, flatten slightly and bake another 10-15 minutes until lightly browned on both sides.
- Serve with your favorite toppings and sides!
