CHEEEEEZY Sauce

This sauce is way healthier than "regular" cheese sauce and is just as creamy and delicious! 

Mac and Cheez

 

CHEEEEEZY SAUCE 


Takes: about 30-40 minutes
Makes enough sauce for about 2 boxes of pasta.

What you will need:
  • 3 Medium Carrots (peeled, sliced into 1/2 then into 3rds)
  • 2 Small Golden Potatoes (peeled and cubed)****
  • 1 Medium Yellow Onion (diced)
  • 4 Cloves of Garlic (peeled)
  • 2 TBS Olive Oil 
  • 1/4 Cup Nutritional Yeast
  • 1/4 Cup Cashews (soaked for 20 minutes)
  • 1 Cup Coconut Milk (unsweetened)
  • 1 tsp Lemon Juice (1/2 Lemon)
  • 1 TBS Garlic Powder 
  • 1 TBS Onion Powder
  • 1 tsp Mustard Powder
  • Salt and Pepper (to Taste)

To Make:
  1. Place cashews and almond milk in blender and blend until smooth. 
  2. Sautee the onions and garlic in the olive oil until onions are translucent. 
  3. Add mixture to blender and blend 10 seconds. 
  4. Place carrots and potatoes in medium pot and add water until vegetables are just covered. 
  5. Add a pinch of salt to the water.
  6. Boil on M High until veggies are very soft (about 15 minutes) and most of the water is gone. (You should have about 1/4 - 1/2 cup of water left in the pot).
  7. Let sit 5 minutes. 
  8. Add the entire mixture to the blender and blend until smooth. (If thinner than desired, add more coconut milk, if thicker, add a small amount of water)
  9. Add spices to blender, lemon juice, and 1/2 tsp salt and pepper, and blend. 
  10. Taste, then add more salt and pepper if needed, repeating until you have it to your taste. 
  11. Add sauce back into pot and heat on M low until warm. 
***You can also use cauliflower instead of or in addition to potato- the carrot is what gives it that delicious orange color!
