CHEEEEEZY Sauce

This sauce is way healthier than "regular" cheese sauce and is just as creamy and delicious!  Mac and Cheez   CHEEEEEZY SAUCE  Takes: about 30-40 minutes Makes enough sauce for about 2 boxes of pasta. What you will need: 3 Medium Carrots (peeled, sliced into 1/2 then into 3rds) 2 Small Golden Potatoes (peeled and cubed)**** 1 Medium Yellow Onion (diced) 4 Cloves of Garlic (peeled) 2 TBS Olive Oil  1/4 Cup Nutritional Yeast 1/4 Cup Cashews (soaked for 20 minutes) 1 Cup Coconut Milk (unsweetened) 1 tsp Lemon Juice (1/2 Lemon) 1 TBS Garlic Powder  1 TBS Onion Powder 1 tsp Mustard Powder Salt and Pepper (to Taste) Completed sauce reheating To Make: Place cashews and almond milk in blender and blend until smooth.  Sautee the onions and garlic in the olive oil until onions are translucent.  Add mixture to blender and blend 10 seconds.  Place carrots and potatoes in medium pot and add water until vegetables are just covered.  Add a pinch of

Fabulous Black Bean Burgers

So, I tried a new recipe today. I had a lot of random things I needed to use up in my fridge, so I came up with this recipe to go along with my side of crispy brussels sprouts and roasted potatoes...and you guessed it, they turned out fabulously! Fabulous Black Bean Burgers Makes: 6 Burgers Takes: ~ 30-40 minutes Served on Dave's Good Seed Bread with some avocado, spinach, and roasted mushrooms (see note). Here's what you need: 2 Cans of Organic Unseasoned Black Beans (drained and rinsed) 1 Poblano Pepper (diced) 1/2 Red Onion (diced) 2 Cloves Garlic (minced) 1/4 Cup Nutritional Yeast 1/4 Cup Psyllium Husk (used as a binder) 2 Flax Eggs  1 TBS Onion Powder 1 TBS Garlic Powder 1 TBS Cardamom (ground) Salt and Pepper to taste  *1/2 Package of Daiya Mozzarella Shreds  *optional To make: Preheat oven to 400° F. This creamy sauce was perfected through experimentation with quantities and ingredients, and finally came together into a sauce that you just can't get enough of! Enjoy it with any type of pasta (I used a black bean spaghetti on this particular day), on vegetables, or how every you would like! I am warning you, though, you may just want to eat it with a spoon!
